Its real milk just like the kind you buy chilled in the dairy aisle but its special pasteurization and packaging process gives it a shelf life of several months without requiring refrigeration. How they make it process it to make it shelf safe is by using a ultra high temperature to pasteurize the milk in a different way than a standard milk carton. Foods in aseptic packaging can last up to six months.

Shelf stable milk is UHT processed Ultra High Temperature processing to kill the bacteria and is cooled and stored in aseptic packing Tetra Pack for example. Commercially made coconut milk may have a longer shelf life but you should still use it within the shortest time possible. Evaporated milk is usually available on supermarket shelves in cans.

You can also store them in a fridge but you should never store in the freezer as the water content in the oat milk will expand after freezing which will damage its packaging and the milk will. Shelf-stable milk is real milk that has been pasteurized at an ultra-high temperature or UHT that comes in sterilized aseptic containers. The combination of UHT ultra-pasteurization and shelf-stable packaging eliminates the need for refrigeration and prevents spoilage without the use of preservatives.
